Pasamos por un pasapur\u00e9s y colaremos, quedando as\u00ed un espeso y rico zumo de granada. Reservaremos medio vaso de esta granada l\u00edquida para la gelatina.<br \/>\n<strong>3 Paso:<\/strong><br \/>\nHacemos zumo con las mandarinas y lo ponemos en un cazo con la ralladura de mandarina, el zumo denso de granada y a\u00f1adimos un poquito de sal. Colocamos al fuego fuerte hasta su ebullici\u00f3n y cuando comience\u00a0 a hervir lo bajamos y dejamos que reduzca la mezcla hasta la mitad.<br \/>\nMezclamos la maicena con un poco de agua fr\u00eda y la incorporamos a la mezcla anterior, dejamos que se cocine hasta que se espese y no tenga sabor a harina, probamos y rectificamos el punto de sal. Reservamos la salsa para las cebollitas.<br \/>\n<strong>Preparaci\u00f3n magret:<\/strong><br \/>\n<strong>1 Paso:<\/strong><br \/>\nHacemos unos cortes en rombo en la piel sin llegar a cortar la carne .Salamos y cimentamos masajeando bien para que se adhiera bien y le a\u00f1adimos un poquito de aceite para que no se adhiera, sin olvidar que esta carne ya tiene mucha grasa.<br \/>\n<strong>2 Paso:<\/strong><br \/>\nColocamos la sart\u00e9n al fuego y cuando este muy caliente colocamos el magret dor\u00e1ndolo mucho por la parte de la piel hasta que quede un poco chuscarrada ,le damos la vuelta y repetimos por el otro lado. Retiramos el exceso de grasa y recubrimos con la salsa y reservamos hasta el momento de servir.<br \/>\n<strong>Preparaci\u00f3n de la guarnici\u00f3n:<\/strong><br \/>\nEl kumquat los cortamos en cuatro pedacitos y los colocamos en un cazo cubri\u00e9ndolos de agua y una cucharadita de az\u00facar de postre. Los ponemos a hervir hasta que est\u00e9n blandos y brillantes.<br \/>\nLas cebollitas glaseadas las metemos en el microondas sin quitarles la piel durante dos minutos, quedando medio cocinadas. Despu\u00e9s las pelamos y las colocamos en un cazo, cubri\u00e9ndolas con la salsa de granada y las ponemos a hervir hasta que est\u00e9n blandas y caramelizadas. Comprobamos el punto de sal y rectificamos.<br \/>\n<strong>Preparaci\u00f3n de la gelatina de granada:<\/strong><br \/>\nColocamos a remojo las dos hojas de gelatina. Calentamos el zumo de granada restante que nos hab\u00edamos reservado, y cuando empiece a hervir a\u00f1adimos las dos hojas de gelatina escurridas del agua de ablandar, estruj\u00e1ndolas bien para que suelten\u00a0 toda el agua. Removemos y cuando se disuelvan bien dejamos enfriar en el frigor\u00edfico<br \/>\n<strong>Finalizaci\u00f3n y presentaci\u00f3n:<\/strong><br \/>\nPrecalentamos el horno muy fuerte<br \/>\nAntes de comer colocamos el magret con el horno muy caliente para que termine de hacerse. El tiempo depende del punto que se le quiera dar, entre 6 y 10 minutos dependiendo del gusto de cada uno.<br \/>\n<strong>Presentaci\u00f3n:<\/strong><br \/>\nCortamos el magret en rodajas y lo colocamos en el plato, le ponemos la salsa generosamente por encima, en un lado del plato colocamos unos cubitos de la gelatina de granada y al otro lado unos granos frescos de granada .Acompa\u00f1amos con los kumquat y las cebolletas y siempre con los granitos de granada por encima para darle una atractiva nota de color<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Les hacemos llegar una deliciosa receta de granada mollar de elche con magret de pato, un plato exquisito a la par de saludable.
